素咖哩 Vegetarian dhall Curry (Roti Prata)

 
 

素咖哩:

Vegetarian chicken, diced
 100g  yellow dhall(soaked for one hour, drained)

(A):
50g  vegetarian sambal
 Curry leaves
15g galangal, peeled and minced

(B):
 some of cumin powder, coriander powder, turmeric powder, vegetarian chicken powder, vegetarian curry powder.
3 potatoes, peeled and diced
1  carrot, diced



(C): 
800ml  water

D:
100ml  coconut milk
 salt and sugar to taste


Steps:
1) Fry the vegetarian chicken until crispy and set aside. Pour away some of the oil, leaving behind about 2-3 tbsp of oil, stir the (A) until the fragrant comes out.

2) Stir-frying the (B) along with the vegetarian chicken and dhall. Add the (C) and simmer over low heat until the dhall and potatoes are soft .

3)Next,add in D .Turn off  heat when it starts to boil.








                            

自制酸奶(优格乳)



自制酸奶 D.I.Y. Yoghurt (优格乳)

所需要的材料如下:鲜奶1公升,酸奶150 ml(优格乳)当菌种,不锈钢容器, 塑料盒,

毛巾, 保温袋



1. 把一整盒鲜奶倒入不锈钢容器中。

2. 把容器放入已煮开了的水中加热.

3. 搅拌使容器中的鲜奶均匀受热, 加热大概40度, 让牛奶温度控制在30~40度为佳,这个温度
的牛奶是温热而不烫的, 不可太热以免把菌种杀死。

4. 加热好的牛奶中倒入酸奶,并搅拌均匀.

5. 再倒入消毒好的塑料盒内 (塑料盒与其盖子用开水烫一烫,消毒杀菌,杀死有害细菌)



6 .将盒子盖好,包裹好毛巾,塞入保温袋中,等待8-10个小时,做好的酸奶, 会凝成豆腐花样的固态,如果时间过久,表面会析出透明的水(奶清),口感很酸。所以应将做好的酸奶转入冰箱, 吃的时候再拌入一点蜂蜜.

A料:
200g 冷饭
1/2粒 酒饼,舂成粉
2小匙 糖
1 大匙水

B料:
350g 糖,加入800毫升,水煮溶,待冷

300 粘米粉,面粉400g

C料:
3小匙 ENO果子盐
2小匙 发粉


做法:
1.将全部A料拌匀,放入一个干净的玻璃瓶中用布盖好,放置一边发酵48小时。


2.发酵好的A料放入打果汁机内,倒入一半糖水打至滑,加入粘米粉.面粉及另一半的糖水搅拌均匀,用布盖好,放置一边再发酵10小时。

3.把C料放入一深盆中,倒入发酵好的B料充份搅拌均匀。

4.倒入小杯子9分满,用大火蒸30分钟至熟。

蛋挞Egg Tarts

Crust:
-300g cake flour
-50g icing sugar
-150g margarine
-1 egg
-1/4 tsp vanilla essence

Filling:
-5 eggs
-110g sugar
-270ml water
-50ml evaporated milk
-few drops of egg yellow colour

Method:
1. To make crust, mix icing sugar and margarine, add in egg, mix well. Next, blend in cake flour, knead until become a dough, wrap with cellphane paper. Chill in the fridge for 30mins

2.To make filling, mix water with  evaporated milk until well combined.

3.Whisk egg and sugar lightly until the sugar is completely dissolved, then combine with evaporated milk mixture, mix well and strain.

4.Divide the crust dough into small portions,  press into the tart mould. Next,  spoon in egg  filling carefully. Bake in the preheated oven at 160'C for 15-20mins. Remove form heat and ready to serve.
